Stout

This beer style evolved from attempts to capitalize on the success of London porters, but originally reflected a fuller, creamier, more “stout” body. Modern versions are brewed from a lower OG and no longer reflect a fuller body than porters.


Dry Irish Stout

  • 3 pounds Flaked Barley
  • 1.2 pounds Roasted Barley
  • 1 ounce Northern Brewer Hops (60 min)
  • 1 ounce Kent Goldings Hops (60 min)
  • 1 teaspoon Irish Moss (10 min)
  • 1 Vial White Labs Irish Ale Yeast
  • .5 ounce Oak Chips in Secondary Fermenter
  • 20cc 88% Lactic Acid at Bottling

Mash Schedule

153 degrees for 60 minutes
168 degrees for 10 minutes

Honey Stout

  • 1.5 pounds Blackberry Honey
  • 8 pounds Beeson’s Marris Otter Malt
  • 1 pound Munich Malt
  • 4 ounces Honey Malt
  • 4 ounces Carapils
  • 8 ounces Black Roasted Barley
  • 1 pound Flaked Barley
  • 1 12 cup pot of strong coffee
  • 1 ounce Northern Brewer Hops (60 min)
  • 1 teaspoon Irish Moss (20 min)
  • 1 ounce Kent Goldings Hops (5 min)
  • .5 ounce Centennial Hops (2 min)
  • 1 vial White Labs California Ale Yeast

Mash Schedule

153 degrees for 60 minutes
168 degrees for 10 minutes
